Queen Claude Mole Sauce, Burgundy, Summer 2025

A sauce of pre-Hispanic origin that survived the Spanish conquest and the colonial period, evolving into the rich and complex sauce we know today. In Mexico, virtually every region has its own recipe for mole, which is why mole has become the most traditional national dish.

Ingredients: Tomatoes, Reine Claude plums, Morita and Guajillo peppers, ALMONDS, PEANUTS, HAZELNUTS, herbs of Provence, cinnamon, nutmeg, fennel, garlic, pepper and salt.
